Hello.
I want to study the kinetics of methionine oxidation by hydrogen peroxide (Met => MetO) in one of our proteins . My problem is that I don't know how to stop the reaction after various time points. I'm thinking about adding an excess of a reducing agent, like sodium dithionite or DTT. Of course, I want to stop the reaction in a way that doesn't further damage the protein or reduce any methionine oxide.
Does anyone have any comments or suggestions about this?
