References to the classical methods of synthesis of N-methylamino acids can
be found in Cheung & Benoiton, Can J. Chem 55, 916-921 (1977). "Studies on
the enantiomeric purity of N-methylamino acids prepared by various procedures".
I believe the most commonly used method of synthesis of N-methylamino acids
is the method of McDermott/Cheung & Benoiton Can. J. Chem 51, 1915, 1973/55,
906-910, 1977 that involves methylation of the Z- or Boc-amino acid with
methyl iodide and sodium hydride.
There are also review chapters by Benoiton in Chemistry and Biochemistry of
amino acids, peptides and proteins (B. Weinstein, ed.) M. Dekker, 1971,
Chap 5, pp163-211 and Protein Methylation (WK Paik, S Kim, eds) CRC Press,
1990, Chap 9, pp341-361 "Update on the synthesis of N-methylamino acids".
